Ingredients (Serves 2)
1 large head broccoli, cut into florets
1 shallot, sliced
8 slices streaky bacon, diced
½ cup breadcrumbs
8-10 Brussels sprouts, shredded
Tahini Dressing:
¼ cup tahini
Juice of ½ a lemon
1 small garlic clove, minced
2-3 tbsp olive oil
Good pinch of salt
¼ cup water (adjust for consistency)
Instructions:
Preheat the air fryer oven and toss the broccoli, bacon, and shallots with a drizzle of olive oil.
Roast at 200°C (400°F) for 20 minutes, swapping the trays halfway (at 10 minutes) for even cooking.
When 5 minutes remain, add the shredded Brussels sprouts and breadcrumbs on top to crisp up.
Meanwhile, in a small bowl, whisk together tahini, lemon juice, garlic, and salt. Slowly add olive oil and water until smooth and creamy.
