In a beautiful space that was once occupied by the renowned The Test Kitchen, a new culinary journey began as TTK Fledgelings took flight. Born from a vision to empower individuals with passion and determination, but lacking formal chef’s or guest service training, TTK Fledgelings offers a unique opportunity to carve out a career in the world of hospitality.
TTK Fledgelings talents are mentored and guided by Luke Dale Roberts and Head Chef Nathan Clarke. This innovative approach sees the ‘Fledgelings’ immersed in daily operations, learning intricacies of the trade while contributing the restaurants dynamic environment. Each Fledgeling is employed full-time, receiving invaluable on-the-job training that sets the stage for their culinary journey.
I was invited to TTK Fledgelings last week to experience the prix fixe menu that will be available until the 31 October 2024 at all of the Luke Dale Roberts restaurants (Pot Luck Club CT and JHB, The Shortmarket Club Rosebank JHB, and TTK Fledgelings in Cape Town)
The prix fixe menu at TTK Fledgelings is a delectable, multi-course LUNCH menu experience available at the extraordinary price of R450 per person.
For starters I enjoyed Magwinya (Vetkoek) with a Smoked Snoek Pâte.
The Kudu Bresaola with Truffle and Garlic Emulsion, Parmesan Shavings and Red Wine Pickled Mushrooms and Chickpea Croutons was fantastic.
Next up was a Bouillabaisse with Hake, Mussels, Prawns, Rouille Mayo with a piece of Focaccia.
The Duck Salad consisted of a Confit Duck Leg in a Truffle, Port and Balsamic Dressing with King Oyster Mushrooms, Walnuts & Mizu.
Dessert was a delicious Red Wine and Muscadel Poached Pear served with Vanilla Ice Cream and a Cinnamon Crumb.
DO try a cocktails at one of the Luke Dale Roberts restaurants. They are renowned as some of the best and most delicious in the land.
