I love to cook and consider myself quite the amateur chef.

This is likely down to years of concocting health(ish) meals for my family. I like cooking from scratch, and generally steer clear of processed foods.

There are a few basics I always have on hand to make my life easier, though. As examples, I’m never without ready-made Pesto and ALWAYS have a jar of the Pesto Princess variant on hand. I also LOVE the brands Chermoula & Chimichurri.

When Pesto Princess reached out asking me if I’d like to try their new fresh cooking sauces, I jumped at the opportunity.

I was sent tubs of the Fresh Tomato Sauce (R55), the Butter Chicken Curry Sauce (R80) and the Cape Malay Curry Sauce (R80). I like that all these cooking sauces are dairy, gluten and preservative free. Find your nearest Pesto Princess stockist HERE

The first I variant I tried was the Butter Chicken Curry Sauce.

I decided to use it on my One Tray Butter Chicken Drumsticks.

This is SUCH as easy recipe and takes just 30 minutes to make from start to finish. This serving is for 2 people.

You’ll need:

1 x Pesto Princess Butter Chicken Curry Sauce

4 x Chicken drumsticks

500g Potato Chunks

240g Carrots cut into wedges

200g Cucumber

40g Radish

1 Spring onion

2 Naan breads

Method

Preheat oven to 220 degrees celsius.

Place chicken on a roasting pan along with potato chunks and carrot wedges. Coat in olive oil & season with salt and pepper. Roast in the oven for 25-30 minutes, shifting halfway.

When the roast has 10 minutes remaining, remove the tray from the oven and coat the chicken and veg in the Pesto Princess Butter Chicken Curry Sauce. Return to the oven for the remaining cooking time.

Side Salad

Cut the cucumber into half-moon and thinly slice the radish into rounds. Roughly slice the spring onion at an angle. Throw everything into a bowl, season with some salt and a drizzle with olive oil.

Place the Naan breads in a single layer on a baking tray and heat up in the over for 4-5 minutes. Cut into quarters before serving.

Plate up the Butter Chicken Tray bake and enjoy!
